My recipe for Matzo Ball soup:

INGREDIENTS
Yield: About 15 matzo balls

4 large eggs

¼ cup schmaltz (rendered chicken fat), coconut oil, or vegetable oil (kosher for Passover)

¼ cup chicken stock or vegetable stock

1 cup matzo meal

¼ teaspoon ground nutmeg

1 to 2 tablespoons freshly grated ginger

2 tablespoons finely chopped parsley, dill or cilantro

1 tablespoon garlic

1 teaspoon salt, more for cooking

dash Black pepper

This recipe was just for the balls which you drop into the soup for which I use

Chicken, or fake chicken, or tofu, etc. if we are doing vegan.

basil and dill

forgot to mention the olive oil and chicken or vegetable stock for the soup.

Do you make your own stock? I always used to when I was regularly cooking for 4 or 5 people, but it's not something I usually do now.

I often collect stock when I boil chicken or vegetables but without way too much salt it seems kind of bland.

By itself, it is bland. Stock is a base for soups, and it's understood that you will be adding herbs and spices when you make the finished product.

It varies, but start with celery, onions, minced garlic, paprika.

Depending on who's eating, decide the rest. I would normally put peas and carrots but my second wife hated peas so none of those when she was around. I normally put sage and thyme, but my third wife hates sage so none of that. I would normally put caraway and marjoram, but almost anyone who's not Czech or Hungarian hates caraway, so none of that if there's anyone eating besides myself and my kids.

Finish with parsley regardless. At least that's one everybody can agree on.

Chicken karahi

Put chicken in ghee, fry a little
Add a ton of garlic and ginger, fry a little
Add chopped cherry tomatoes, chili powder, paprika, coriander powder, cumin. Reduce for 20 or so mins
Add some garama masala, coriander and chilis
Simmer a few more mins

Serve with some flat bread and minted yoghurt
